Stuffed Flank Steak




INGREDIENTS;

3 green onion,red and/or yellow peppers,cored and chopped

* 1/4 cup prepared sun-dried tomato pesto,like button,divided

* cup crushed Caesars-flavored croutons,like porridge farm

* 2 lbs.flank steak,butterflied

* 1 cup shredded mozzarella w/sun dried tomato and basil,
like Sargent.


PREPARATION;

*heat oven to 350 F.in skillet coated with cooking spray over high heat,

cook peppers 5 min.,stirring frequently.stir in 3tbs.pesto and croutons.remove from heat.

* spread pepper mixture evenly over flank steak,leaving 1"border.

sprinkle cheese evenly over mixture.

Roll steak jelly-roll style.using kitchen twine,tie meat at 2"increments to secure.

*Brush meat with remaining pesto.place steak on roasting pan.Roast 3o min.,or until meat thermometer reads 140 F.
